Cancer-fighting ice cream?
Hi friend!
I hope you've had a great week. It's summertime here and while I know that for some readers it's winter I don't think ice cream ever goes out of season. ;) So, I thought I'd help you start the weekend off with a healthy recipe from this book I really enjoy called Rawsome Vegan Baking by Emily von Euw. It's naturally sweet with no added sugar and has the health benefits of cancer-fighting berries!
Fruit Crumble with Banana Ice Cream...
Crumble
1/2 cup (50g) raw walnuts
1/2 cup (45g) rolled oats
1/2 cup (88g) pitted dates
ground cinnamon
Fruit
1/2 cup (75g) blueberries, fresh if possible
1/2 cup (75g) strawberries, fresh if possible
3 bananas, frozen
Whatever other fruit you'd like!
Pulse "crumble" ingredients in a food processor until it gets a granola-like consistency, pulsing in cinnamon to taste. Transfer to a bowl. Chop your fresh fruit and mix into the crumble. Blend the bananas until smooth and creamy and scoop onto your fruit crumble. Enjoy!
